GHEE RICE

Easy and simple recipe. All time favourite lunch menu in our home. My kids like this very much and hence I used to make it atleast once in a week for their lunch box. Any gravy will taste so nice with this ghee rice. But my kids like baby potato fry as side dish for this rice. This recipe is a great boon to working women as it saves our cooking time a lot.



Ingredients

Basmati or raw rice - 1 cup ( I used raw rice here, but basmati rice will look still more great)
Onion - 1 (finely chopped )
Ghee - 2 tbs

For seasoning

Cinnamon stick, cloves, cardamom, bay leaves,   Star anise - as needed
Cashew nut ( optiona, I didn't used it)

Method

Soak the rice in water for half an hour and drain the water and keep aside.

Heat the ghee in a kadai. Then add all Ingredients under the head seasoning one by one. Fry little. Ten add onion and sauté till it turns into brown colour with nice aroma. The add the rice and sauté till it become heated. Transfer the contents into pressure cooker add two cups of water and salt ( coconut milk also may be used instead of water) and cook it till two whistles and keep the flame in low flame for five minutes and then switch off the flame. 



After sometime open the pressure cooker and with a spoon or fork sauté the rice well. Serve hot with any gravy or kuruma.

Can decorate with cashew nuts fried in ghee.

May add ginger garlic paste or mint leaves or peanuts, but adding these things will change the flavour of ghee rice. Just try once without adding anything as I mentioned before, if u feel it is too plain, can add optional items. But plain ghee rice tastes best with gravy.
