Keerai rice

I love keerai varieties more and like its taste too and I have the habit of eating all keerai. But my kids doesn't like normal keerai poriya or kootu. So I used to prepare them in different form so that they can't identify it is as keerai. Keerai rice is one of the best and healthy lunch box recipe for kids. Kids also will finish up full box without knowing it is keerai. I given below keerai rice prepared using  ponnakanni keerai. But you can use any keerai.

Ingredients


Keerai          - 1 cup any keerai
Rice             - 1 cup
Onion           - 1 cup (small onion) , can use big onion also.
Tomato        - 1 
Garlic           - 4
Sambar powder - 1tsp
Turmeric powder - 1/2 tsp

Oil - 1tsp
mustard seeds - 1tsp
urad dal - 1 tsp
Roasted peanuts  - as per taste .

Method

Cook rice and place it in a large bowl and let it cool.

Wash green leaves four to five time well and keep it aside. ( chop it finely if needed)

Chop onions well. Split green chillies into two. Chop tomato also very fine keep aside.

In a pan put the oil and add mustard. When pops up add urad dhal, peanut and fry till it turns light brown. Add chopped onion, green chillies, garlic and fry well. Then add tomato pieces and fry for few seconds. Add sambar powder, turmeric powder and salt and mix well. Add chopped greens and stir well. Reduce the heat and stir now and then. No need to add water. The Keerai will get cooked in its own water content. Stir fry till all the water in Keerai is absorbed. Add the cooked rice and mix well.



Serve hot with appalam or chips,
