Making chutney using vegetables is mainly to make kids to get benefits of all vegetables. Can prepare peerkangai chutney either with its skin or flesh. Today I prepared using the flesh part of peerkangai. Very tasty.
Recipe for peerkangai chutney........... cut peerkangai to small pieces, fry in little oil along with salt, let it cook in sim flame, in the mean time, get scrap coconut, in a kadai,add oil, season with 1 tsp mustard seeds, then add more urad dhal, (2 to 3 tbs), red chillies, hing powder, fry well, switch off flame, add coconut and tamarind, saute in the heat itself..... switch off peerkangai too........ first add seasoned items along with coconut and half of cooked veg and grind well without adding water, then add remaining veg and pulse for one second..........very good combo for idly and rice too..........
