After Diwali, still snacks items are running, so daily very light food in home....mostly idly with chutney.... I hope for some more days I won't try varieties.....Today for breakfast I prepared idly and mint chutney....
There are three to four methods for preparing mint chutney... This slightly varies from all we normally prepare ..
Ingredients
Mint leaves - 2 cups
Small onion - 1 cup
Tomato - 2
Garlic - 5
Green chilies - 4
Coconut - 1/4 cup
Red chilies - 3
Cumin seeds - 1 tsp
Channa dhal - 2 tbs
Mustard seeds - 1 tsp
Hing powder - 1 pinch
Salt and oil as needed
Method
In a pan add 1/2 tsp of oil, then add four red chilies, cumin seeds, channa dal... Fry well, keep aside..
Then in the same pan, add oil, then add small onion, green chilies, garlic and sauté well till it turns pink...then add finely chopped tomatoes and sauté well... Can add salt at this stage ... Lastly add mint leaves ( can replace coriander leaves too) and sauté for one minute, the add coconut and sauté for few seconds and switch off the flame... Allow it to cool
Then grind everything together... Then in a pan add oil, season with mustard seeds and hing powder and pour over the chutney and serve
This goes well with idly , dosa.... Can try it with chappathi too....
