Ingredients
Baby potato - 1/2 kg
Oil - 2 tbs
Curd - 1 tsp
( you may increase or decrease masala items according to your taste )
Chilli powder - 2 tsp
Coriander powder - 1/2 tsp
Garam Masala powder - 1/2 tsp
Cummin powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Curry and coriander leaves ( optional )
For seasoning
Mustard seeds 1 tsp
Cummin seeds - 1 tsp
Method
Pressure cook the baby potatoes for two whistles. Then cool it and peel of the skin and put it in a wide bowl, add chilli powder coriander powder, cumin powder, garam masala powder and salt, mix everything well with curd and keep aside atleast for 15 minutes. Then heat oil in a pan, then add mustard and cumin seeds, when it splutters, add the baby potato mix and cook it in low flame, now and then pluff potatoes with a spoon and allow it to roast well. You can put this in one burner in low flame and finish up all other works in remaining burners of the stove, so that in low flame potatoe will roast well.
This tastes so good with curd rice and this is my daughter's all time favourite lunch box combination.
