Brinjal gravy

This also another boon recipe to working women. It is very easy to make this recipe and can finish up within 15 minutes. We always used to prepare kuruma or chenna or dhal for chappathi which consumes little time. So when we need a different combination for chappathi and that too quickest and tastier one, this is best option


Ingredients
 
Brinjal –  1/4 kg 
Tomato - 2
Onion – 1 big
Green Chillie – 1 big
Oil - 1 tbs

Masala powders ( can increase or decrease as per ur taste )

Turmeric Powder – 1 tsp
Coriander powder – 1 tsp
Cumin  powder – 1 tsp
Chillie powder - 1 tsp
Garam Masala powder - 1/2
Salt as required

For the seasoning

Cumin seeds -1/4 tsp
Mustard seeds -1/4 tsp



Method

Cut the brinjal lengthwise, chop the onions finely. Choose well ripped juicy tomatoes and cut it finely.

Heat a tbsp of oil and add the mustard and cumin seeds. Add onions and sauté till it turns pink. Add green chillies and tomatoes and cook till tomatoes are well cooked. Then add all the masala powder and salt needed. Add brinjals, 1/2 a cup of water and pressure cook till one whistle and switch off the flame. Mix everything well and can decorate with coriander leaves.



This goes well with chappathi and plain rice.
