surrakkai paal Kari ( bottle guard milk gravy)


For this paal curry we have to use mixture of cream and milk... but i dont have cream in our home.....so first thing today, what i did is, put one packet of milk in big vessel in sim flame and then started kneading dough for chappathi, cutting vegetables and making curry, in that period, milk reduced to 1/4th and become thick with little cream floating....now comes recipe.... first season mustard seeds, cummin seeds, curry leaves in two tsp of oil.... then add finely chopped onion (3) and 2 green chillies... fry well, when it turned pink, add finely chopped tomatoes(3), when tomato turns soft add, bottle gourd (cut in to small square shapes) (Surakkai), mix everything well, cover the pan and cook for 5 mins... then add ginger garlic paste, salt, one cup of water,  when vegetable completely cooked, add chilli powder, saute for few seconds, then add thick milk  or mixture of cream and milk.....keep in sim till everything mixes and well, and consistency reached to the level u desire....add dry kasthuri methi leaves..... serve hot with roti, chappathi, nan......
