Ingredients:
1 cup Basmati Rice
1 cup Methi leaves/Fenugreek leaves
1 cup Palak leaves
1 Onion,sliced
1/2 cup Paneer,cubed
1 1/2 cups Water
1/2 cup of curd
1/2 inch ginger
2 green chillies
1 red chilli
1 tsp mustard seeds
1 tsp cumin seeds
2 tbsp Oil
1 tbsp Ghee
Salt to taste
Method
Wash and cut methi leaves if it is big leaves variety other wise can add direct without cutting..... Wash spinach leaves well and blanch it in little hot water, cut and keep aside...... Put paneer on hot water for two minutes and then cut it and keep aside.... Soak basmathi rice in water for half an hour( I used raw rice only).... Then cut onions, green chillies , crush ginger and keep ready.....
Now in a pan add either ghee or oil or mix of both.... Season with mustard seeds and cumin seeds, now add onion, green chillies, red chillies, ginger, coriander leaves, and sauté well for few minutes.... Then add methi leaves fry for few minutes, then add spinach leaves, turmeric powder, coriander powder, salt, curd, paneer ( I used one and half cup water and half cup curd) sauté for few minutes, then add rice to it and mix everything well and pressure cook in pressure cooker..... Can add coconut milk too instead of water..... It is not necessary to add any masala here as this may modify flavour of green leaves.... Today I get good appreciation from my family and friends in office for this tasty and healthy recipe.....
