Potato brinjal sabji

This is one of the simplest and easier sabji that goes well with chappathi and roti. Today I tried this as side dish for pomegranate pulav. Since pomegranate rice is very less spicy rice, this gravy goes well with that.




Ingredients

Potato - 4
Brinjal - 5 to 6
Onion - 3
Tomato - 3
Garlic - 3 pods
Ginger - 1 inch 
Green chilli - 1
Red chilli powder - 1 tsp
Coriander powder 1 tsp
Garam masala - 1/4 tsp
Turmeric powder - 1/4 tsp
Cumin powder 1/2 tsp
Cumin seeds - 1/2 tsp
Oil - as needed
Salt - as needed


Method

Cut potato in small square shape.... Half boil it and keep aside...

Heat oil in a pan,  add cumin seeds, when it splutters, add onion, green chillies, sauté well till onions turn pink. Add ginger garlic paste and saute for a few more minutes.Then add  tomatoes, turmeric powder, chilli powder, coriander powder, cumin powder, sauté well till tomato blends well with everything, add brinjal and saute for one minute.... then add1 cup of water, salt, garam masala and allow to cook in medium flames... Sauté everything well in between. I added green peas since I had left over peas added to the pomegranate pulav I prepared today. When everything cooked and blends well, switch of the flame. Garnish with coriander leaves and serve along with roti IR ghee rice.
