Vangi bath or brinjal rice



Today I have no other vegetable in home other than brinjal.... So tried vangi bath....This is both Andhra and Karnataka special with minimum variations... I have modified bit according to our taste without much spicy itmes. Even those who don't like brinjal will like this recipe.... My kids who don't like brinjal when added in anyother form happily eating this.

Ingrediants

Raw Rice -1 cup
Brinjals- 4 medium size
Onion - 1 (optional)
Tomatoes-3 
Green chilli - 2
Ginger 1 inch grated
Turmeric Powder -1/2 ,tsp
Oil - 1tsp
Mustard -1/2 tsp
Urad dal -1/2tsp
Asafoetida - 1 pinch
Curry leaves -little 
Salt as required

To be roasted and grinded

Chennai, dhal. - 1tbsm
Coriander seeds - 1 tbsp
Urad dal -2 tsp
Red chillies - 3
Black peppercorns -1tsp
Coconut  scraps - little



Method

Dry roast items given under dry roast.....first roast everything except coconut.... At last add coconut and roast little and switch of the flame, Allow it to Cool and grind it to powder.

Soak rice in water for 1/2 an hour and cook by adding 2 cups of water ( water depends on quality if rice) .....allow it to cool....

In a pan add oil, season with mustard seeds, urad dhall, asafoetida and curry leaves, add onion, sauté well, Then Add brinjals, green chilli, ginger and turmeric powder. Cook on low flame if needed sprinkling water now and then. Then add the masala powder and salt...sauté for few minutes... When brinjal is cooked, add to tomatoes and sauté well till it blends well with the mix and brinjal cooked well....add this to the rice , mix well and decorate with coriander leaves. Serve hot with any raita or pappadam........
