Poorana Kolukattai

This my favourite kolukattai and everyone in my family loves this kolukkattai. Mostly am not able to prepare it frequently. Only on vinayagar chathurthi in prepare it mostly. So used to prepare in large quantities.  Normally I prepare this in hands. Today for the first time I prepared using kolukattai mould.


Ingredients

  • For the Outer coating
  • Kolukattai flour or rice flour - 1 cup
  • Water - 1 1/2 cups
  • Ghee - 2 tsp
  • Salt - as needed

  • For Pooranam

  • Shredded coconut - 1 cup
  • Jaggery - 3/4 cup
  • Cardamom powder - 1 tsp

Method

In a pan add grated jaggery, when it is melts, filter it and then again keep in flame. When it begins to boil, add scrapped coconuts and mix everything well, till it become thick. When it become bit watery, can add rice flour and then mix everything well in medium flame till it becomes thick. Add cardamon powder and switch off the flame. Allow it to cool. Pooranam is ready. Make balls out of it.

We can use kolukattai flour or idiyappam flour directly. But when we use rice four, you have dry fry it in pan and then should use. Boil water. Add salt to rice flour and mix well. To this flour add boiled water, little by little and knead using wooden spoon or back side of normal spoon. When it reached correct consistency, stop adding water and leave for few minutes. Amount of water we need may differ for different rice flour varieties. Knead the dough well. Cover it with cloth. Then make balls out of it.

Grease your hands with oil or ghee, then flatten the rice flour ball, keep Pooranam and close the rice covering in the shape you like....like this prepare all... Steam it for 5 to 10 minutes. Enjoy eating it hot.
