Ridge gourd skin thuvaiyal

Today I prepared ridge gourd gravy for curd rice... hence using that skin I prepared thuvaiyal.... This recipe I learnt from mother in law.... Almost she never waste any items when we chop vegetables... Even when I peel skin of vazhakkai, when I peel extra skin along with flesh, she used to take that and separate skin and flesh... I just prepared blank version of this chutney for healthier option... In this you can add coconut to increase taste.... Can fry onion and tomato too along with skin by adding little water, can cook them and then make chutney, when doing like this you can have feel of normal chutney without green colour.. So change ingredients as per taste of your family.... But basic is the following recipe.


Ingredients

Nicely chopped skin of ridge gourd - 1 cup
Urad dhal - 2 tsp
Thoor dhal - 1 tsp
Red chilies - 3
Black pepper - 5
Tamarind - one pinch

Method


In a pan add oil, when it is heated, add urad dhal, thoor dhal, red chilies, black pepper and fry everything well and keep aside.

In the same pan add little oil and fry ridge gourd skin till it become soft and cooked well.

Then grind everything together adding tamarind and salt

Serve hot with idly or dosa.

Goes well with hot rice and rotis too.

This chutney is best for those who following diet and since it is very high in fire content beneficial to us in many ways.
