Ridge gourd gravy

Since everyone recovered from fever, for past few days I completely avoided oil items in my home. Added more vegetables in all possible ways in food. Hence today prepared another healthy version of ridge gourd, ie ridge gourd gravy. You can have this with chappathi if you make it bit watery and can have with curd rice or ghee rice etc when u make it bit thick. But method is same for all. You no need to add any water when cooking this vegetables as the ridge gourd itself will give out water during cooking process. So please try this and give your feed back,



Ingredients

Ridge gourd - 3 ( skin removed and flesh chopped in small square shape)
Ginger garlic paste - 1 tsp
Onion - 2
Tomato - 3
Red Chilli powder - 1 tsp
Coriander powder - 1 tsp
Salt and oil as needed.
Coriander for decoration,

Method


In a pan add oil, when it is heated, add mustard seeds, when it splutters, add onion and sauté till it turns pink, then add tomatoes and sauté till it blend well with onion. The add ginger garlic paste till its raw smell goes. Then add red chilli powder, coriander powder, turmeric powder, salt and sauté well. Then add ridge gourd and sauté everything well. Keep the flame in sim and cover the pan with lid and cook till ridge gourd become tender. Switch off the flame and garnish with coriander leaves. 

This goes well with, rice and chappathi.
