Brinjal rice

This is different from the vangi bath... Vangi bath is the original brinjal rice which is more spicy and involves more time.... This is simpler version which can be prepared very quick in the morning time.
As I love brinjals I love to have it in any form, all tastes so nice.



Ingredients

Rice - one cup

Brinjal - 5 to 6 ( purple one is better)

Onion - 1

Tomato - 1

Red chilli powder - 1 tsp

Coriander powder - 1 tsp

Cumin powder - 1 tsp

Garam masala powder - 1/2 tsp

Red chillies - 2

Mustard seeds - 1/2 tsp

Urad dhal - 1/4 tsp

Channa dhal - 1/4 tsp 

Hing powder - 1/4 tsp

Water - 1/4 cup

Oil and salt as required

Method

Heat a pan with oil, add mustar seeds, when it splutters, add chana dal ,urad dal,red chillies and hing. 
fry for few minutes and add finely chopped onions, saute it turns to pink colour.. Now add lengthwise sliced brinjals ...Fry till brinjal get cooked well, may be for 5 minutes...now add the tomatoes and other powders mentioned above. Mix everything well until the brinjal blends well with the masala . Add salt and water.....close it till brinjal gets cooked. Now add the cooked rice and mix well with the masala gravy. Garnish with coriander leaves and serve hot.

Can add ginger garlic paste too if you wish....

Can decorate with cashew-nuts....
