ingredients
Vegetables of your choice - two cups
( I used finely chopped carrot, beans, cauliflower, dry green peas soaked over night and cooked )
Onion- 3
Tomatoes - 4
Green chilies - 4
Red chilies - 3
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam masala powder - 1/2 tsp
Ginger - 1 inch
Garlic - 4 pods
Cummin seeds - 1 tsp
Coriander seeds - 1 1/2 tbs
Oil and salt as needed
Coriander leaves for decoration
Method
In high flame sauté ( in little oil )very finely chopped carrot, beans and cauliflower till they become so crispy... You will get crispy vegetables only when you sauté them in high flame... Keep the vegetables ready... If using dry green peas, soak overnight, pressure cook nd keep aside... I don't have Cpasicum in home,,, but using capsicum to this gravy will give very nice flavour... Hence roast the Cpasicum in high flame in ghee and keep aside....
Coarsely powder the red chilies, cumin seeds and coriander seeds and keep aside.
In a Kadai add oil , add the coarse masala powder.... Then add onion and sauté well... Then add ginger, garlic and green chillies paste....sauté well....then add red chilli powder, coriander powder , turmeric powder, salt , sauté well.... Then add finely chopped tomatoes and sauté well, added cooked green peas... At this stage can add needed water and allow everything to boil well...I run handful of cooked green peas for one pulse in the mixie cup and mixed in the gravy. This will make the gravy thick and tastier too.... When everything mixed well, smear garam masala and add crispy vegetables and mix everything well and allow to cook for two minutes. Then switch off the flame..
Can decorate with coriander leaves.... Can add lemon juice otoo before decoration...
