Full night heavy rain with heavy thunder and lightening in Chennai... Enjoying climate.... Due to rain, schools too announced leave for kids.... But I got up as usual to pack lunch for hubby as he needs to go to office.... Packed him tomato rice and vazhakkai fry and bf gave idly and chutney...
Then for me and kids, I thought of preparing some dish very hot to eat during rain ..... At the same time wanted to prepare something which s very favourite of kids and at the same time bit healthy too, at the same time should prepare some instant item without consuming much time.... Immediately rava roti came to my mind....
Immediately soaked four cups of rava in curd and water ( equal proportion) such that rava is completely immersed ... While it is soaking, I grated carrot, coconut, removed corn seeds, mashed four green chillies , nicely chopped onions, coriander leaves and curry leaves, in the soaked rava added all these along with salt and hing powder ( be bit generous in adding hing powder, this will enhance taste every much)..
I prepared batter bit thick.... If you want to prepare like dosa, can add more water and prepare dosas... But I kept batter bit thick, took one hand full of batter and flattened it using hand after immersing in water... For this purpose, you can keep water in broad vessel and everytime after placing batter in tawa, immerse your hand in water and flatten batter in tawa... Add oil around the roti and flip it other side when cooked... Then serve hot with Coconut chutney or sambar ... My kids just came and took and ate plain without any sidedish even before i complete making another roti...
