First time tried sweet seedai...... My aunty usually used to prepare and give to me.... This time learned recipe from her and tried,.... Taste so good..... But so many cracks.... My aunty too prepare with cracks..... But she is saying seedai is good only of comes with cracks....
Ingredients
Rice flour - 1 cup
Urad dhal flour - 1 tbs
Jaggery - 1 cup
Grated coconut - 1/4 cup
Seasame seeds - 1 to 2 tbs ( I used black one )
Cardamon powder - 2 tsp
Ghee or butter - 2 tbs
Oil as needed
Method
Dry roast rice flour in a pan for one minute.. ie till it become hot... But take care that colour should not changed or over roasted.... Just one minute enough..
Fry urad dhal in a pan till it turns golden brown colour and make powder of it....
Sieve both the flour
Roast sesame seeds, keep aside....
Roast coconut scraps and keep aside...
Nicely powder the jaggery, add boiling water till jaggery immerse completely... Allow to boil, till jaggery completely dissolve in water.... Dnt over boil, no string consistency is needed... Just jaggery should be completely dissolve in water... That's enough... Filter and keep aside
Now mix flour, ghee, seasame seeds, Coconut, very little salt, mix well... To this add jaggery syrup little by little and and in other hand with a spoon mix flour and syrub, knead like this till it become soft dough...
Make small balls out of it....
When oil is heated, add balls.... Don't add much balls ( first time when I put balls in oil, I added more balls fully all over oil, then I find it so difficult to turn it, when I try to turn, I feel like it will break, but luckily didn't, so when I put balls second time, I added very few balls, only half the pan... Then kept flame in sim... This time balls cooked well and came out very nice....so add only few balls and try.. Will come out nice...
Store it in air tight container...
