Today's special recipe is carrot rice.. Almost everyone might have tried this... May be everyone's recipe will have little variation... So try this also and give your feed back... This is an easy way of making kids to eat carrots... Just pack this in lunch box in the shape they like, sure they will like this taste... It is very good for growing children to add carrots regularly in their diet.
Cook rice and cool it...
In a pan add little oil, dry fry coriander seeds, cumin seeds, channa dhal, red chilles...at last add coconut and fry well and allow to cool , then make it as powder and keep aside..
In a pan add oil, season with cinnamon stick, cloves, cardamon, bay leaves, mustard seeds, urad dhal, fennel seeds....then add onion, saute well, then add carrot and saute well for few minutes... Don't over cook carrot, rice will taste good if it is just sauted well without cooking much... Then add grinded powder, salt, mix everything well...
Serve hot with any raita, chips or pappads...
