I just started this blog to register my cooking recipes. I am not great in cooking. Before marriage I don't know any cooking. After fixing marriage, one day parent went to give invitation and mom asked me to prepare sambar. But when I went kitchen, really I found it difficult to find which is thoor dhal, instead of Thoor dhal, I used channa dhal because I don't know the difference between two. But even then my parent praised that sambar with channal dhal. Like this lot of funny incidence took place till I learn cooking, Now I learned a lot in cooking, sometimes my recipes turned out to be so tasty. So I will be posting the recipes that attracted everyone in my home, especially my son become a fan for this briyani.

Ingredients
- Raw rice - 2 cups ( can use basmati rice, but this itself tasted superb )
- Onion - 2
- Tomato - 2
- Carrot - 1
- Potato - 1
- Beans - 20 g
- Peas - handful
- Green chilly - 2
- Soya balls - handful ( soaked in hot water and then squeezed)
- Ginger garlic paste - 1 tbsp
- Cinnamon - 1
- Cloves - 3
- Saunf - ¼ tsp
- Cumin - ½ tsp
- Red chilly pwd - 1 tsp
- Garam masala pwd - 1 tsp
- Turmeric powder. - ½ tsp
- Curd. - small cup
- Mint leaves - handful
- Cashew - 5
- Coriander leaves
- Cashew nut - optional
- Salt to taste
- Oil and ghee - your choice ( I always use very less oil, since I use non stick electric rice cooker, with less oil and ghee briyani tastes so good, but if you are using pressure pan , to tham you should be more liberal in using oil and ghee to get nice taste)
METHOD
Wash rice, soak it for ten minutes, drain and keep aside.
Heat oil in a frying pan, sauté cloves, saunf, cumin for some time, then add chopped onion and fry till the colour changes to pink. Then add green chillies, mint leaves, ginger, garlic paste and saute for one minute. Add red chilly powder, garam masala powder, turmeric powder and stir well. ( I used only carrots, beans and soya balls since other vegetables not available yesterday in home) and fry. Add finely chopped mint leaves, coriander leaves and sauté for a minute. Add curd and stir well and turn off the flame. Sauté the drained rice with ghee in a pan for a minute or two. In the electric rice cooker, grease pan with ghee, add vegetable mix, rice and three and half cups of water and combine and switch on the cooker. when cooked, open lid and mix well ( can sprinkle little garam masala at this stage who likes that raw flavour).
Can decorate with coriander leaves and roasted cashew nuts.
Those who do not have electric rice cooker, may pressure cook for one whistle and simmer for five minutes.
Can serve hot with any raita or gravy. I prepared gravy using soya balls for this briyani, will post that recipe soon.
