After opening of schools for kids, become so busy, have no time to take photos of the items I prepared. Even in midst of so busy works, somehow managed to take some snaps in rush, so presentation may not be much good, but try the dish, will be very tasty. This is one of the kids most favourite lunch box recipe. Will be more tasty if served hot with tomato sauce.
Ingredients
- 3 cups cooked Basmati Rice , ( I used raw rice only)
- 1 cup of Paneer sliced lengthy
- 1 Onion, sliced long and thinner
- 1 Bell Pepper, sliced lengthwise ( I haven't used since I don't have it in home that day)
- 3 Spring Onions, sliced - whites and greens separated
- 1 tbsp Butter
- 1 tsp Sesame Oil
- 1 tbsp Soy Sauce
- Salt and Pepper to taste
Method
If u bought the paneer from the store, put the paneer in hot water for few minutes, so as to remove the dirt and to make it soft. Don't keep long in hot water. After that slice the paneer to the shape you want, I sliced lengthwise.
Leftover cooked rice works best for fried rice recipes. If that is not an option, then make sure freshly cooked rice is cold. Cook with little water so that the grains are separate.
- Cut bell pepper, onion, spring onion and keep ready. Make sure to keep all ingredients nearby since the cooking is on high heat, everything needs to go in quick. Delay will cause the food to burn. Heat a pan in high heat and when hot, add butter and oil. Put paneer and saute it for 1 min. Sauté until it turns little brown or golden. Drop the onion along with the paneer. Keep stirring for 10-15 seconds and then add bell pepper and onion whites. Stir until you bell pepper become crisp. Next add the soy sauce and keep stirring until the sauce is well combined. Then add the rice. Stir to combine. Taste to see if it needs salt and adjust accordingly. Add pepper. Remove from heat, sprinkle with spring onion greens and coriander leaves.
Serve hot with tomato sauce.
