Elephant foot yam – 1/2 kg
Tamarind juice – 1tbs
Turmeric powder- 1tsp
Red chili powder – 2tsp
Turmeric powder - 1tsp
Garam Masala – 2tsp
Salt to taste
Oil for cooking
Method
Clean and cut the elephant foot yam as shown in the picture below. Large and bit thick.
Put the elephant foot yam in a small pressure pan, pour little water so as to cover all yam, then add, red chilli powder, turmeric powder, salt, tamarind juice. Then cover the pressure pan. But don't pout the cooker whistle ( vent weight). Allow to cook like this for ten minutes. Then Switch of the flame. Why we should follow this method to cook this yam is, time saving, fuel saving, oil saving. Being working woman, I always used to try easier and quicker method for every recipe. Now when you open the cooker led, you can see that yam is cooked with all masalas we added nicely merged with it. Now you can mix garam masala with this and mix everything well. Since we have allowed steam to flow without adding weight, there won't be excess water to filter. But first time triers when used excess water, can filter it at this stage. But take care that it is not over cooked. If you correctly follow the method, you will get perfect cooked yam,
Now, put dosa tawa in the stove, keep the flam in simmer, and spread cooked yams in tawa. Sprinkle oil all over the yam in the tawa.I used non stick tawa to avoid excess oil. But if it is cooked in iron tawa, result will be great. When one side is fried enough, flip it to other side. Fry it till golden brown on both the sides. Cook in sim. It takes bit longer time. By frying like this we will get a crispy yam outside and spongy yam inside. When fried well at both sides, Switch off the flame. Serve hot with , rice, sambar and curd.
Being healthy conscious I used little oil and masala items. But if you increase oil content while frying, it will be of a great inviting dish to eyes.
