Today I don't have normal idly batter in my fridge, need to prepare something in rush... When thinking rava only came to my mind... Thought of preparing upma, but my hubby and kids don't like it ( but I love upma so much)... So immediately change my mind and planned to prepare rava idly. Very easy to prepare....yummy... You can either use vegetables or prepare plain.
Ingredients
Rava - 1 cup
Sour curd - 1 cup
Veg carrot, green peas, beans etc - 1/4 cup
Coriander leave - few
Green chillies - 3. ( increase or decrease as per ur taste)
Cooking soda - one pinch ( optional)
for seasoning
Oil - 2 tsp
Mustard seeds - 1 tsp
Jeera seeds - 1tsp
Urad dhal - 1 tsp
Chenna dhal - 1 tsp
Method of preparation
Take a thick bottom pan and add 2 tsp. of ghee and fry the semolina till it is light brown in color and mix it with the sour curd. Mix well along with required salt and bring it to idli consistency batter. Allow the batter to stand still for 15 to 20 minutes. In 2 tsp. of oil, splutter mustard seedss, jeera seeds and then add the urud dhal and channa dhal. Fry little, then add curry leaves , green chillies, ginger and sauté for few minutes. Carrot and green peas may be added. Sauté for few minutes and mix this seasoning with the batter.To get Soft spongy rava idlis pinch cooking soda may be added. add the fried cashews ( optional)Grease the idli mould. Fill the moulds with batter and steam cook for atleast 10- 12 minutes.Now Rava idlis are ready to be served along with coconut chutney or sambar.
