Ginger Chutney

Ginger is very good for digestion. So I prepare this chutney after a feast day with heavy food. That too with idly it tastes so good and extra idly will go inside and at the same time. We will feel light stomach too.


Ingredients

Ginger - 1/2 cup grated 
Channa Dhal - 1 tbs
Urad dhal - 1 tbs
Green Chillies - 1
Red Chilies - 2
Garlic - 5 pods
Coconut - 1/4 cup
Tamarind - small ball size
Salt and oil as needed
Jaggery - little
Mustard seeds - 1 tsp
Curry leaves - few.

Method

There are almost 100s of ways to prepare ginger chutney.... Today I prepared following this method... U never feel hotness of ginger when u take ginger in this form.... In a pan, add 1tsp oil, add channa dhal, urad dhal, green chillies, red chillies, garlic (optional), fry everything well till become golden brown, remove from fire allow to cool.... Then in the same pan fry ginger in 1/2 tsp of oil for three minutes, switch off flame, add coconut and sauté in the heat of pan itself.....then first grind dhal varieties, then add ginger, coconut, tamarind, salt, little jaggery and grind everything together.... Season it with mustard seeds and curry leaves in sesame oil and serve with hot idles, very heavenly , healthy combo..... Even can have this with rice.
