Vendakkai Fried Rice ( Lady's finger fried rice )

August 6th is birthday of my dad and hence I prepared this special healthy fired rice for him. Even kids will love this fried rice very much. 



Ingredients

Lady's Finger - 1/2 KG
Rice - 1 cup
Spring onion - 10 pods
Green part of spring onion - 1 bunch
Ginger - 1/4 inch
Garlic - 5 inch
Capsicum - 1
Pepper powder - 2 tsp
Salt, oil, ghee as needed

Method

For fried rice, just fry bindi with little salt, till it leaves its sticky content,, keep aside.. In a pan, add garam masala seasoning, then nicely chopped spring onion, ginger garlic paste, sauté well in high flame, then add green part of spring onion and capsicum, saute in high flame, then add cooked and cooled rice and pepper powder, mix everything well, then add fried bindi and mix everything well in medium flame..... Decorate with spring onion greens.... Bindi really blends well with rice and can prepare this for parties....
