Vendakkai More kulambu

More kulambu is one of my favourite dish. Already I have posted two varieties of more kulambu and this is another variety. Only mild variations in all. It is easy to make when we have buttermilk in our stock.  Better combo for this is either potato fry or paruppu usili.



Ingredients

Curd – 2 cups 
Turmeric powder – 1 tsp
Hing powder
Salt to taste
Lady's finger - 1 cup ( chopped)

To grind

Toor dal - 2 tbsp
Bengal gram dal  – 2 tbsp
Green chillies – 6-8
Raw rice - 1 tbsp
Cumin – 2 tsp
Ginger – 2 inch 
Grated coconut – 3 tbsp

To season

Mustard seeds – 1 tsp
Red Chilies - 2
Curry leaves – 1 stem
Hing powder little

Method

Soak Dhals for half an hour and grind all the items mentioned under grind. Instead of adding water it is better if you grind them using buttermilk.






Beat the curd well without adding water. Since I don't have mathu in home, I pulsed the curd in mixie cup for one second. Add turmeric powder, hing powder and salt and mix everything well and add the grinded mix to the buttermilk and keep aside.


In a pan add little oil , add chopped lady's finger or bindi and fry adding salt in sim flame till it turns brown. You can put bindi in one burner in sim and can carry out all other works , sauting in between.


Heat a pan, add oil. Add mustard seeds, red chillies, When they splutter, add the curry leaves and hing and then add curd mix.




 Keep in sim flame. When the everything begins to boil, switch off the flame. Dont boil it more. Add fried bindi at this stage.




 Can add coconut oil at this stage little. It is optional. Serve hot with rice and potato fry or paruppu usili.
