Idly is a healthy South Indian breakfast. Everyone loves idlies. But the same time we need varieties. Hence I used to try different varieties in idly. This is one among them. I read this recipe long back in a book. I forget exact recipe. But somehow recollected and made it and result is so good. This idly best suited for sugar patients since methi seeds and soya both good for them.
Soa soya bean and 3 tsp fenugreek seeds in water for four hours or overnight, soak idly rice for four hours or over night,.,, then grind soya bean and fenugreek seeds for half an hour, remove it, then grind rice coarsely, then mix both using salt and allow to ferment for 6 hours. Then prepare idly as usual. Serve hot with any chutney.
