Tomato rice with soya chunks and green peas

As I have many times told that am interested in preparing variety rices since it is easy to pack this for lunch, since I have to pack lunch for all members of our home daily... Usually we used to prepare tomatoe rice, but with little extra additions which improves its richness and equals the taste of biriyani....


Ingredients

Rice - 1 cup 
Onion - 1
Tomato - 3
Soya chunks - 1/4 cup
Green peas - 1/4 cup
Green chilies - 1
Sambar powder - 1 tsp ( otherwise red chilli powder + coriander powder)
Garam masala - 1/4 tsp
Mint leaves - 1/4 cup
Milk - 1/4 cup ( can substitute coconut milk too)
Coriander leaves - for decoration
Fennel seeds - 1/2 tsp
Bay leaves - 1 pieces
Cardamon - 2
Salt as needed
Ghee - 1 tsp

Method

Cook rice adding two cups of water in pressure pan and allow to cool. Put soya chunks in hot water for ten minutes, then wash with cool water, keep aside...In a pan add oil, season with fennel seeds, bay leaves, cardamon, then add onion, green chilles, garlic, mint leaves, saute well , then add tomatoes, soya chunks, green peas, chilli powder, garam masala  coriander powder,salt, saute well, when tomatoes cooked add milk, when gravy thickens, switch off flame, allow to cool, then mix this gravy with rice adding ghee. Decorate with coriander leaves serve...
