Raw Jack fruit kuruma

Though in Kerala raw jack fruit is widely used in cooking, in tamilnadu mostly people never use raw jack fruit except from chettinadu areas. Like Kerala they too use jackfruits and try different varities. In all their marriages, this raw jackfruit occuppu space in any form, kulambu or kootu or vada or kuruma. First i start with recipe of kuruma. Actually i learned this from mother in law. She used to make frequently in our home. Like other kurma, she never prepares this as side dish for rotis etc, but this is kurma is used only along with rice. But this kuruma used to taste sooo nice with jackfruit flavour.


Ingredients

Raw jack fruit - 1 ( we use baby jackfruit, which is used to be very small in size)
Onion - 1
Tomato - 2
Green chillies - 5 
Oil - 1 tsp
ghee - 1 tsp
Salt as needed
Coriander leaves and curry leaves ( i didnt used as i dont have it in home today)

To fry and grind

Oil  - 1 tsp
Fennel seeds - 1 tsp
Cinamon stick - 1/2 inch
Bay leaves - 1 small piece
Cloves - 1
Friend gram - 1 tbs ( you can replace cashewnuts here)
Garlic - 10 pods
Ginger - one inch piece
Kush Kush - 1 tsp
Green chilies - 5
Scrapped coconut - 1 cup

Method

First grease your hands and knife with oil before cutting the raw jackfruit... Remove skin and then cut it into square peices and immediately put them in water mixed with buttermilk... Pressure cook it for one whistle and keep aside. ( can add one potato too, but it is optional)

Fry all items (mentioned under fry and grind ) in one teaspoon of oil... Cool and grind it to paste adding water.

In a pan add oil, add onion, saute well, then add tomatoes, saute well, then add coconut paste and saute well, till nice aroma rises. Then add cooked rawjackfruits and salt. When everything mixes well, switch off the flame. Add coriander leaves and a teaspoon of ghee at the top and keep closed till serving.
