Today i tried Ada Pradhaman....
I prepared rice ada fresh in the morning and immediately prepared pradhaman out of it.... First i saw this recipe when i was very young in a TV program... Now famous Iyer cook , Arusuvai Arasu Nataraj , at that time just he started doing programs for TV... I wondered seeing the steps for preparing ada and thought who will do all these in home.... But i didnt even imagine i will do all these when grown up...
We dont get ready made ada in Chennai ( or i dont know where it is available), further am interested to prepare in home , so tried...
Recipe
Just soak raw rice for one hour and drain all water, grind it in mixie cup adding water little by little till it reaches dosa batter consistency.... Take banana leaf, cut it into small pieces, toast in little to make it stiff, spread the batter on the back side of the leaf and roll it, better tie it with string... Steam cook this .... Then remove ada from the leaf, if it is sticky, show it in running cold water, it will come out easily..., then cut it into small pieces...
Make jaggery syrub, filter it and allow to boil little, then add prepared ada, thin coconut water and allow to boil, till it thcikens, then add little salt, then add second coconut milk , allow to boil more... Lastly add first extracted thick coconut milk, keep in sim flame for few minutes... Switch of the flame... Lastly add cardamon powder, Cashewnuts and raisins roasted in ghee,.. You can also add coconut pieces roasted in ghee....
