For my food group besan flour week, i tried Capsicum broad beans Zunka.....
Zunka is an authentic typical Maharashtrian dish. Roasted besan flour is used to make this dish. You can try this with or without vegetables. Today i tried it with capsicum and broadbeans.They can be made with or without vegetable and served as a side dish with roti. You can try this with any veggies of your choice. Here goes the recipe.
Capsicum -2
Broad beans - 200gms
Besan flour - 3 tbsp
Onion -1
Green chillies-2
Turmeric powder - 1 tsp
Red chilli powder - 1 tsp
Mango powder - 1 tsp
Coriander Powder - 1 tsp
Cumin powder - 1 tsp
Garam Masala Powder - 1 tsp
Besan flour - 3 tbsp
Onion -1
Green chillies-2
Turmeric powder - 1 tsp
Red chilli powder - 1 tsp
Mango powder - 1 tsp
Coriander Powder - 1 tsp
Cumin powder - 1 tsp
Garam Masala Powder - 1 tsp
Salt -as needed
For seasoning:
Mustard seeds -1 tsp
Cumin Seeds - 1 tsp
Curry leaves - a few
Hing - a pinch
Red chilli - 2
Oil - as neeeded
Method
Chop capsicum wnd onion and dice.
Dry roast besan flour for three minutes or more till nice aroma comes. This step is most important which gives nice taste.
In a pan add oil, add mustard and cumin seeds. When they splutter add hing powder curry leaves and red chillies. Then add green chillies and onion. Saute well.
Then add capsicum.Cook uncovered for few minutes. Keep stirring,
After few minutes, add turmeric powder, salt,red chilli powder, mamgo powder, coriander powder and cumin powder.Mix well .Continue sauteing . When capsicum is almost cooked, sprinkle besan little by little, saute well so that no lumps are formed. Add oil now and then while adding besan flour. If you are healthy consious, sprinkle water instead of oil. Add all besan flour like this little by little.MCook on medium high heat for few more minutes so that all masala is mixed well to capsicum and besan. Add garam masala and saute for few more minutes.
Serve hot with rice or roti.
