Ingredients
Bitter Gourd - 2
Tamarind - gooseberry size
Channa dal - 2 tbs
Urad dhal - 3 tbs
Coriander seeds - 1 tsp
Cumin seeds - 1 tap
Red chillies - 4 ( increase or decrease according to ur taste, i added 10)
Coconut - 1tbs (optional)
Curd - little
Salt - as needed
Oil - as needed
Method
Immediately after getting upin the morning just you cut the bitter gourd or grate it and add curd, salt to it and keep aside... Then finish all your other works, by then one or two hours might have crossed. If you want to eat with bitter taste, just soak for 10 minutes , if you want to remove bitterness soak for long time.. I leave it for nearly two hours. I cut the bitter gourd in round shap, very thin, but you can cut it to small pieces when you want to save time and oil..
Then completely squeeze water content from the bitter gourd and again wash it with water once, again squeeze the water and keep bitter gourd dry...
In a pan add 1 tsp of oil, fry channa dhal, urad dhal, coriander seeds, cumin seeds, tamarind, red chillies one bye one . ( you can fry everything together too)... Switch of the flame, in the same pan add coconut scraps and saute well in the heat of the pant itself. Deep fry bitter gourd in oil and allow to cool for little time.
Then grind everything toegther except coconut scraps... Lastly add coconut and salt and grind for two to tree pulse, After some time transfter it to air tight container and store. When you want to store for long time avoid coconut..... By adding coconut, you can store it outside 10 days and after that can
Store in fridge and eat.
Can have it with idly or rice with or without adding seasame oil.
