Ari Pathiri

This is a kerala dish. Ari means rice in Malayalam, and ari pathiri is like our chappathi or pancake made out of rice flour. Whenever I enquire about breakfast of my friend family from Kerala, mostly they used to tell pathiri. From that day I developed interest to make pathiri in my home. My first attempt ended in utter failure and everyone kidded that whether it is rice appalam. Since being working women, I find it little difficult to make it in Morning rush hours. So decided not to try it hereafter. But again on Sunday, I am bored up with regular Tamilnadu breakfast recipes, then only thought why can't try to make the pathiri again and this time ended in success. Though my pathiri doesn't equals the Kerala made soft thin pathiris, this tastes so good  and kids like those pathiris very much, ended in fight between them for whom to get more pathiris to eat.  So I post this recipe here. Suggestions to improve this pathiri, if any, is most welcome. 



Ingredients

Rice flour - 2 cups
Water - 2 +1 cups
Salt to taste

Method

Fry the rice flour in a hot pan, till it reaches cream colour and allow to cool. Ready made pathiri flour is available in some big departmental stores, when u buy it no need to fry in pan.  Boil 2 cups of water in a pan. Then add the rice flour to the water. Allow it to cook for two to three minutes in low flame. Then with spoon mix it to form lumps and then switch of the flame. 



Empty it to a wide plate and then dipping your hand in the water knead the flour well till it becomes so soft like chappathi. Kneading the flour only decides the result of soft pathiris. Make small balls out of the dough.


Then press the balls in chappathi plate either by using oil or rice flour. Using of oil will result in thin pathiris. But I used flour only. Like this press all balls and dust it rice powder and keep.


Heat a non stock tawa, put the pathiri and flip it after few seconds, again flip it, till it puffs up. Then remove it from tawa and keep on a plate. Like this cook all pathiris.




Serve hot with any gravy and in Kerala usually it is served with non veg gravies. Can dip it in coconut milk and serve ( optional)
