Idiyappam

Every South Indian knows how to prepare idiyappam . But in olden day, grandmas are there, they used to prepare idiyappam flour for mom. But nowadays everyone is busy have no time to prepare flours and use ready made idiyappams. So I suggest some of easy methods of preparing idiyappam flour and idiyappam.

Soak 5 cups of  boiled rice ( pulungal arisi) in water for two to three hours and grind it in the grinder. Usually when I prepare grind for idli, I used to grind this also. You have to use the grinder flour immediately otherwise keep it in the fridge immediately after grinding.

Then make idlis out of the flour as below



Then put this idlis in the stand idiyappam hopper and press as below



Then you can add sugar,  coconut and cardamom and serve or serve plain idiyappam with veg stew or kuruma.


Another method for preparing flour is,

Soak raw rice in water for 2 hours, drain the water completely. Spread it in a cloth for 10 minutes.
Then give the wet rice to the mill for grinding. If that is not possible, grind it to a fine powder in the mixie. Roast the rice flour until you get a sandy texture. Sieve it and store it. I

You can store that flour in an air tight container and use it when ever you need it.


 Boil water well, add salt and oil to it.Add the water little by little to the rice flour ( for one cup of idiyappam flour you can use one and half cup of water ) and make a soft dough. Knead it well.
Grease the inside of the idiyappam maker with oil and fill it with the prepared dough and press it in a circular motion on idly plate in the form of long strings. Steam it for 10-15 minutes. I used my idly pot for steaming.




Serve with sweetened coconut milk, coconut chutney, Kurma or stew
