Mint or pothina rice

Lunch box recipe of our home today.... Mint rice.... Tasty healthy food for all age groups......very easy to make in morning busy time for Woking women....



Soak one and half cups of basmathi rice or raw rice in water...Grind one big bunch of mint leaves, 5 green chillies, ginger , garlic ( optional), 10 small onions.....in a pan add ghee or oil or mix of both, add fennel seeds, cardamom, cloves, cinnamon. Bay leaves, fry well, then add lengthwise sliced onion and sauté well, then add grounded mix and allow to boil till raw smell goes , then add drained rice, salt, juice of one lemon mix well and transfer contents to pressure pan, pressure cook till one whistle and keep in medium fame for 5 mins and switch off the flame. Can decorate with cashew nuts or add roasted bread (all optional)....serve hot with chips or raita....can add veg like green peas or potato....
